PUMPKIN TUNA ROLLS

INGREDIENTS

 

1 can of Tritún tuna in oil

2 large pumpkins

1 bunch of parsley

100 grams of mushrooms

100 grams of baby spinach

1 tomato

100 ml olive oil

100 grams of Manchego cheese

Salt and pepper

PREPARATION

 

1. Slice pumpkin to long and thin slices with the help of a Mandoline slicer.

2. Soak in water pumpkin slice.

3. In a pan sauté with olive oil chopped mushrooms, chop spinach, tomato and Tritún tuna in oil.

4. Once the filling is cool off, the rolls are made with the pumpkin.

5. Top off with grated Manchego cheese.
